The UL Department of Marketing and Hospitality’s Hospitality Management program was pleased to host chef Alain Bosse as a guest speaker in classes this week.

A Nova Scotia native, Bosse has traveled the world promoting the use of local Canadian ingredients while cooking.  He spoke of the close connection between Nova Scotia and Acadiana and ways to keep this connection alive.

Bosse is in Lafayette for the Grand Revel Acadien (Great Acadian Awakening) where he is participating in FETE DE FAMILLE with Chef Gilbert to prepare a tantalizing Cajun buffet utilizing local ingredients from Canada.  Bosse was born and raised in Pictou, Nova Scotia and graduated from New Brunswick Community College with a degree in Culinary Arts. After graduation, he began working with the Atlantic Canada Lobster and Seafood Promotion Group promoting the superiority of Atlantic Canadian lobster.

“When we travel, we love to make a connection with the students,” said Bosse.  Chef Alain spoke to students in Mrs. Becky Dubois’ Lunch Club class (the capstone restaurant class for UL’s Hospitality Management majors) about various cooking techniques as they were cooking and prepping for the day.  He then spoke to Mr. Johnathon Trahan’s International Tourism class where he talked about his experiences traveling around the world and learning about different cultures.
